Eat Like Me

 

What is it?  Quinoa spaghetti with ground hamburger.  The secret is in the sauce :)

What is it?  Taco meat, cheddar cheese, tomatoes, over a baked potato.  Pretty self explanatory.  Below is the taco seasoning we used.  My only gripe was that it was not very spicy and they gave no indication on the label as to the spice level.

 We were in a pancake mood at our house last week:

Recipe 1: Paleo pancakes and bacon.  Make sure to double the recipe if you are making it for two good sized eaters!

Recipe 2: Gluten Free Blueberry Pancakes with syrup and turkey bacon.  I did not use quinoa flour (used gf flour + xantham gum) and I left out the baking powder since it contains corn which Claire can not do.

 What is it?  Chicken Enchilada Zucchini Boats with Rice and Beans.  The beans are just a can of refried with cheddar and to the rice I added a can of rotel and a few spices (can’t remember what now!) 

What is it? Clam Spaghetti – used quinoa pasta though.  Basically just cook your noodles and in a separate skillet saute EVOO and garlic.  Add a can of clams (with juice) and heat.  Add chopped up parsley at the end.  I did the same thing but with chicken and chicken broth (instead of clams and clam juice) for Drew and Claire.

We had a few friends over this past weekend and did pizza night!!

Everyone else’s crust.  It is the whole grain pre-made crust from whole foods.  Attempting to make our own crust has not gone so well in the past (remember this?) But we really like these crusts a lot and if you split them in half they are perfect for thinner crust pizzas.  Ma and Pa Aschman (aka Drew’s parents – not us), you guys should pick some of this up and see how you think it compares (they are, after all, the pizza making experts.)

The spread.  We did a spicy sopressata, red onion, and fontina cheese pizza with balsamic drizzle and combinations of red sauce, sausage, pepperoni, red peppers, and mozzarella.

 What is it?  The crowning achievement of Drew and my day!  A pumpkin cheesecake on a gluten free crust with homemade whipped cream (not pictured).  It took Drew and I quite some time to get that gluten free crust made!!  And if you make this, it has to refrigerate over night.  We served it the day we made it and no one was that impressed (myself included) but when Drew and I went for leftovers the next day it was so great!!

This I am posting on here more for a reference for myself.  We had a delicious salad with our pizza consisting of spinach, toasted almonds, blueberries, goat cheese and honey mustard salad dressing (cut the oil in half)
